1 1/2 tbsp. coconut flour

3 tbsp. almond flour

1/2 tsp. baking soda

1/8 tsp. cinnamon

2 eggs

2 tbsp. cream

3 tbsp. milk

1 tsp. pure vanilla extract

Preheat  cast iron skillet  or griddle over medium heat and add a tbsp. butter or coconut oil.

Sift flours, baking soda and cinnamon in small bowl.

In medium size bowl beat eggs until frothy, then add cream, milk and vanilla extract , then stir in  dry ingredients .

Pour batter to create pancakes that are about 3 inches in diameter( you can  use an ice cream scoop).

Cook approximately three minutes or  until bubbles appear in the batter , then flip over for a minute.  Makes 5 pancakes.

You can top pancakes with yogurt, ricotta cheese or whipped cream ,then add fresh berries of your choice.  Enjoy!
